Discover A New Simple World
busy cook, it is always bad form to inquire as to why
the other is busy. It just isn’t done, thus data is lacking, likely to
remain forever so.
Busy home cooks, numerous
as we are, have no Organization. That is, no conference of busy home cooks
has ever been held. How could it be, if we are all so busy? This is most
likely a plus. It means that we have no agenda, and are free to do
whatever works for us as individuals, the way we always have.
Our Methods in the Limelight Now
Being limited as to time, the
busy home cook has always had to proceed simply. In recent years simple
cooking, formerly the province of the busy home cook, has come into vogue
in restaurants. This seems to have happened most famously, though not
exclusively, through the influence of Alice Waters and her Chez Panisse
restaurant.
This is gratifying, but can
also present a challenge. Maybe we have been used to cooking a little
spinach hurriedly, just to get a green vegetable on the table. Now we know
that this is "warm spinach salad." Give a little attention as to
how the spinach is wilted, add a couple of selected seasonings, nicely
balanced, and you have a dish that today is served at some of the most
highly regarded restaurants in the country, and indeed the world.
Certainly it is food (simple, of course) for thought.
